Spanning 2,300 square metres, the new restaurant features an open kitchen and dedicated spaces for traditional Patagonian spit-roasted lamb, offering guests a culinary experience that brings together regional cuisine, an extensive selection of Chilean wines, signature cocktails and craft beers brewed on the reserve.
Torres del Paine, November 1, 2026. As part of its ongoing renovation project, Hotel Las Torres has opened El Galpón, its new restaurant exclusively for hotel guests. Located in the heart of Torres del Paine, the restaurant invites guests to discover the flavours of Patagonia through a culinary concept that celebrates open-fire cooking, locally sourced ingredients and regional traditions.
Covering 2,300 square metres, the new restaurant was designed by architect Pedro Kovacic, with interiors by Enrique Concha. Among its highlights are dedicated areas for traditional Patagonian spit-roasted lamb, where guests can gather around the fire and share an experience inspired by the region’s culinary customs.
The open kitchen features a seven-metre-long grill for preparing meats and vegetables. This space reflects a culinary approach that blends traditional Patagonian cooking techniques with contemporary cuisine, incorporating ingredients grown in the hotel’s own garden alongside produce characteristic of southern Chile.
Led by Executive Chef Joaquín Pitta, now in his fifth season heading Hotel Las Torres’ culinary team, the new restaurant’s menu places open-fire cooking at its heart. Highlights include a selection of grilled meats, fish and seafood, alongside dishes featuring fresh vegetables, herbs and other ingredients harvested from the hotel’s garden.
The menu also features starters and desserts showcasing regional ingredients such as rhubarb, calafate berries and aromatic herbs, bringing the distinctive flavours of Patagonia to the table.
“We are in one of the most extraordinary places in the world to showcase the culture of Magallanes and Patagonia through food. Fire is at the heart of our cooking: charcoal, smoke and traditional spit-roasted lamb reflect our rural heritage and history. At the same time, we want to celebrate the diversity of Chilean produce and make the most of what our own garden provides,” says Joaquín Pitta, Executive Chef at Hotel Las Torres.
The dining experience is complemented by an extensive Chilean wine list, designed to take guests on a journey through the country’s major wine-producing regions, from the northern valleys to southern Chile. The selection features renowned labels, iconic wines, a variety of grape varieties and sparkling wines, alongside an exclusive Las Torres wine collection developed in partnership with Viña Viu Manent.
The cocktail menu also draws inspiration from Patagonia, incorporating smoking techniques, roasted fruits, native botanicals and house-made ingredients. Signature creations include the Pampa Boulevard, featuring smoke from calafate root, and El Galpón, made with Tierra Paine gin and a house-made rhubarb cordial. Each cocktail is designed to bring the aromas and flavours of the restaurant’s kitchen to the bar.
The offering also includes craft beers brewed on-site at Reserva Las Torres by its own brewmaster, further strengthening the restaurant’s connection to locally produced ingredients and regional flavours.
With the opening of El Galpón, Hotel Las Torres expands its culinary offering, bringing together cuisine, wine and cocktails in a space that celebrates Chilean produce and the traditions of Patagonia.
